This product was created by the Matter distillery for Liqueurs de France, specifically to thumb their collective noses at the VdT producers who are asking the Swiss government to only allow absinthes produced in the VdT to be sold as absinthe. Since the Matter distillery has been making high quality absinthes outside of the VdT for years, this comes as an understandable reaction.

The absinthe pours bright emerald. A tad light, looks natural+, as in it looks like it's had a bit of help. It smells of strong, minty wormwood (or mint and wormwood) upfront. Sweet, nice anise, some perfume.
The louche is slow and a tad weak but not inappropriate. Very good milk jade colour with shades of blue. With water it smells minty, powdery, and sweet. Anise has come forward and is very nice.
Very powerful flavour with lots of wormwood and mint. Anise is present but just can't compete. Very noticeable lemon and spice. Maybe a tad brighter and more acrid than prefered. Very crisp and refreshing. I can see the argument that there's a bit too much pontica but that's something I enjoy.
The finish is cool, minty, and fruity, with an earthy undertone. Long with a bit of the Ricola herbal character I've noticed in a couple of absinthes lately.
This absinthe has a nice, unique character. With a bit of aging I expect it would mellow out nicely but as it is it tastes very new.

A nice light medium green with a bluish undertone. A little monochromatic looking, it's typical Matter coloration, most of which don't quite look all natural to me. Pretty nonetheless. Louched, good green retention with an amber undertone, and powdery blue edges and meniscus.

Nice weight and just the right translucence to allow for very pretty opalescence even under moderate light.
Aroma
Unlouched, anise with herbs, mainly wormwood, detectable from several feet away. Louched, wormwood and other herbs up front with the anise and fennel definitely in a supporting role. An extremely clean base. A little minty, with pontica, hyssop and a slight earthiness showing, as it warms.
Flavor
Just like the nose, wormwood is up front. Joining forces is some coriander, creating a spiciness that pecks away at the tongue. Again, like the nose, anise and fennel are secondary. Spicy, tingly, with some mint and lemon notes, not so unbalanced as to be a "2", not so correct as to be a "4". My favorite dilution is a smidge shy of 5:1. As it warms, I get a slight "evergreen" tinge.
Finish
Long, peppery, spicy, evergreenish, slightly astringent and drying. Absinthium and pontica definitely in control. The pontica seems a bit much, to me. Sit on the finish long enough, and it becomes quite drying. The anise and fennel provide a little airy cooling waft while breathing through the mouth, but this just increases the drying effect. Nothing seriously wrong, but not seductive enough to garner a "4" or "5".
Overall
Nothing really wrong, nothing really refined. It's good, but not great. Nothing wrong with that. The way it's balanced, it reminds me of a milder Matter version of La Berthe De Joux. "La Berthe De Joux Light"!, very wormwood forward, but without the same fine level of ingredients and craftsmanship. Certainly correct enough for use in showing those new to absinthe a proper profile, and enough of a statement to allow the aficionado to join in "thumbing their collective noses" at the VdT. Throw in the very reasonable pricing, and it makes for a fair, no-nonsense, mainstream absinthe experience.
Done with a 1 ounce dose, diluted 4.5:1, 5:1 and no sugar.

Color: This is the best green I have ever seen in an absinthe. Emerald perfection, not too dark or light. This is exactly what comes to mind when I think of absinthe-green.
Louche: Very pretty...dancing oils without much clouding until about 1:2. Once the clouds start, it louches fairly quickly. I wish the louche took a little longer because of how attractive it is. WONDERFUL post-louche color; beautifully opaque without being too thick...a very nice texture. Ends a beautiful opals-in-moonlight color.
Aroma: Neat it smells a good deal like molasses, which I like instead of the typical sugar-sweet that occurs. Once louched it's very clean and spearminty with a slight woodiness and a nice wisp of anise.
Flavor: It has a very dessert-like flavor but there most definitely is not the typical sugary taste which is a nice change: candied citrus, and some really nice wormwood flavors. I'm puzzled by the lack of sugar-taste, as the wormwood is far from bitter, and I'm not sure what's balancing the typical wormwood bitterness. The anise is present, but very faint, primarily being more minty/citrusy.
Finish: A really nice, dry finish with a whisper of sweetness, and a nice wormwood linger.
Overall: I'd like to reiterate how amazed I am by the presentation of this absinthe. The flavor is good, but not strictly what I look for in an absinthe, but I don't feel that it's "weird" by any means. I look forward to drinking a bit more of this absinthe over time.

Louche: Wonderful oil trails at first. It louches slow and the clouds don't pop but slowly form instead. Decent layering and clouds quickly once the oil trails are done. Perfect thickness when done and retains some of the previous green color in hue.
Aroma: Heavy on mint and licorice root? Molasses sweetness and fennel following behind. Higher ratios balance out the smell but also tends to mute them all a tad. Very mint heavy at lower ratio.
Flavor: Very minty and at “correct†ratio still has some alcohol heat. Usual absinthe flavor is there but behind the wormwood and mint duet that start out in force. An unusual but not inappropriate taste.
Finish: The finish lasts a long time and goes from sweet to bitter but not much else is going on. Simple and pleasing.

Louche: Builds at a nice steady pace with distinct layering. A lovely shade of light green, and a pretty translucent glow when complete. A bit on the thin side, but not overly so.
Aroma: Clean, crisp and promising. A light herbal profile reveals itself as water is added.
Flavor: Wormwood up front with a tactile, but pleasant bitterness. There is a strong pungent edge to this wormwood, that I'm on the fence about. I had to take it to 5:1 before I found it tasty enough to enjoy, however, It was a bit thin here. There is a sweet element as well, so I had to be careful about too much sugar. For me, it needed just a tad. Tasty anise as well, wrapped in a strong herbal blanket. A very different flavor than I expected from Matter, but interesting. I'd describe it as herbal, with a slight medicinal edge...lacking in the floral and spicy elements I enjoy so much in other Matter recipes. If you like a strong and forceful wormwood, you may enjoy this more than I do. It's good, just not one of my favorite profiles.
