Color: Nothing to say, perfectly clear with no sediment.

Louche: A surprising louche, starting soon, with unusual violet reflexes. At 1:5 it is still thick.

Aroma: before adding water alcohol is pretty strong, with lesser anise and herbs notes. With water the aroma intensifies a lot, alcohol disappears, and the notes of many herbs I can’t trace appear. Intriguing, not the usual blanche.

Taste: A surprisingly complex taste. Some holy trinity is there, along with many other herbs. Fresh and neither bitter nor too sweet. The different tastes trigger the whole tongue.

Finish: all the complex flavours linger in the mouth and nose pretty long.

Overall: I’m quite surprised by this absinthe. Based on my previous experience with the other Awen absinthes, all of them interesting but somehow light in taste and aroma, I feared the blanche could be blank. I’m glad to ascertain it is not. While not being at all a traditional blanche, it has an interesting personality of its own. It is evident that Julien Fanny is not afraid to march to the beat of a different drum.
