Appearance: a beautiful golden hue, indicative of a well-aged absinthe
Louche: wonderfully opalescent and well formed. Hues of yellow, green, and white.
Aroma: herbacious and refreshing. Lots of wormwood and other alpine herbs along with the requisite anise that plays as a supporting character.
Flavor/Mouthfeel: creamy and decadent mouthfeel with well-balanced flavors of wormwood and anise. Very well balanced between sweetness and dryness. Even without sugar, there is no underlying bitterness. Juicy.
Finish: slight astringence and a very long lasting finish begging you to take another drink
Overall: There are less 'old books and leather' aromas and flavors than what I'd expect from an absinthe that is supposed to be inspired by the flavors of pre-ban absinthe, but that's not necessarily a bad thing. This absinthe takes on an 'old' profile, while still staying lively and floral. A tremendous absinthe. Highly recommended.
