A micro distiller in Ontario, Canada near Niagra Falls has announced an absinthe coming soon. http://dillons.ca/ne...ing-this-winter

 

The website does say home delivery is available from the distillery (but does not say if that is limited to ON or CA,... it might me limited)

Once every week or two I do a search for anything new in the absinthe world, just playing around with search engine settings and filters. Just for fun.  :twitchsmile:

I live relatively close to the Dillon's distillery and visited the shop recently to pick up their new rose gin (delicious) and the wormwood bitters. The absinthe won't be available until the spring/summer season, they are still waiting for some of the ingredients to arrive.

Dillon's offers an interesting new make rye.  It's cool to taste what 100% rye tastes like off the still (although it is watered to 40%).  Can't wait to try their absinthe.  

 

There might be another absinthe coming out of Quebec in the future.  The guys who make this:  http://www.pigerhenricus.com/en/, are planning to make an absinthe as well.

I had a bottle of the piger henricus gin in my hand last time I went to Ottawa (I always pop into the SAQ when I can) but I decided on Ungava gin instead.

 

Dillon's White Rye is decent, I can't wait to try the first batch of rye whiskey is set to come out in 2015

Ungava is great for drinks with citrus and martinis.  Piger is the best for G & T's.
