The sugar cube is placed over a glass, liquor poured over the sugar, and
set on fire. To douse the flames, ice water is slowly dripped over the
sugar cube which breaks down into the drink.

Just................ sad. How can anyone fight such a persistent misconception?

I've said it before and I'll say it again. When I first started doing public demos and talks about absinthe, the most common unexpected question I got was about burning it. The people who sold that bilge really did a good job of it.

I posted a rely to the vid, as well as sent an email to the restaurant itself. I also posted a copy of the email to Local's FB page. :)

Thank you George Rowley. The guy who has given us purpose by starting the flaming trend.

I only learned the story of how George thought this up recently.  I did not realize it was him.

The staggering part is a significant French absinthe historian/author's relationship to the brand,

when the guy who owns it created this nonsense.

It's not really staggering when you find out that said historian/author owns part of the brand.

The history put forth on his 'biography' page certainly spins things a bit differently than the reality.

Pretty much everything they put forth "spins things a bit differently than the reality". I said it a while ago, and I still think the most polite term I can think of to describe them is grifters.
