What I can say its that we try to not rectify the base too much because I want the absinthe to have a strong wine base note, with all the fruitiness, vanilla, and everything else that goes along.

I understand this completely. It makes good sense and as I understand, it makes good booze for you.

No further explaination needed. :)
Some folks may cringe each time I use the term "Booze" regarding these high quality drinks.
I mean no offense. There are bottles of extraordinary booze out there. I've tasted a few. Relax.

I can't understand why everybody isn't obsessed with absinthe. It tastes great, makes you feel good, has a fascinating history, artists, writers, rituals, medicines, yadda, yadda, and it's even organic! Hell, it'll probably solve global warming if we give it a chance.

And whiskey, and gin, and cognac, and .......... :)

Went to place an order for L'Ancienne this morning, out of stock. Damn! I blame the bank for its slow clearance times.

I will check with Martin but I'm pretty sure there are around 20 bottles left at the distillery and I suppose absinthes.com will now place another order and get them since they are out of stock.
Well now you know that "limited stock" was not just a marketing gimmick :)

I got lucky, and was buying Sauvage, decided to get La Grenouille, saw the L'Ancienne, remembered a seasoned citizen gushing about it, re-read the reviews, and decided that anything that gets that crusty old clown that emotional gotta be pretty good. It pays to pay attention around here. :)

Ok, so as promised here's the update: there are 18 bottles left and they should be shipped soon to absinthes.com.

These bottles are the last ones from the année 2011, once they are gone they gone.

Assuming there won't be last minutes issue that will prevent me from flying back to Europe, the distillation for L'Ancienne année 2012 is set for august/september!

Bill, I'm guessing that is when Martin (like most folks in Europe) go on vacation. Stefano sneaks in, does his magic, and vanishes before they come back. Or at least, that makes for a good story. :)

I shedule my vacation around the kids. They don't live with us anymore but we have to pick a time when we think we can slip off for a couple days while they are busy with their kids and school.

Yes, we aren't in control of our lives but we made the choices and the kids are just a real delight. The grandsons are more fun than steppin' on baby chickens.

They are the absolutely the best. So are everyons elses to them. :)

As far as Stefano and his distilling goes, it doesn't matter to me as long as he does it. :)

We always want a good absinthe and looking forward to a good absinthe makes the producer smile I would think. So, back to the pot Sir and make us some booze........when you can of course. :cheers:

Who here has had both versions? I would love to hear of the differences between the first and second batch.

I loved that old leather taste. I have read it has been tamed.

I would try to describe this, but I'm not especially good at that, and this is glass #4, and Shabba and Absomphe always use up all the good words, anyway.
You won't regret waiting for it.

All I know is I get paid next Friday, and if there are any in stock, im ordering at least two... :thumbup:

I did order a bottle of DP Blues Cat today, but that wont be here for a week or so... Until then I've got a bottle of Taboo, that I am actually growing rather fond of. Each time is a new experience. Not a new hill, but a new day on the same hill, climbing a little bit higher.
