I have two different brands (Pere François & Lucid), 2/3 empty, of absinthe. I noticed today that they have a completely different smell (by no means a good change; slightly melon-y and rotten) than they did the day before. Is this just my palate being fussy, or do the oils break down after only a couple weeks? They are being stored in a cool, dark basement. Thanks!

Absinthe will change as it ages (usually for the better, but this takes time). My guess is now that the bottles are only 1/3 full and there is more air in the bottle, that air has had a chance to absorb more of the scents associated with the herbs used and that is what you are smelling. Example: My bottle of Mansinthe gets funkier and fishier the lower the level gets.
