A Mexican Casserole

You need :

- 8 oz. cottage cheese (1 cup)
- 5 eggs, slightly beaten
- 1 can (4 oz.) of chopped green chilis
- 2 cups shredded Monterey Jach Cheese (8 oz. block)
- 2 Tbs flour
- 2 Tbs melted margarine
- 1/2 teaspoon baking powder

Combine all. Pour into 9" pie plate generously sprayed with cooking spray.

Bake at 400 F for 10 minutes.

Reduce to 350 F for 20 minutes or until set in the center.

Serve with sour cream and or salsa.

The most challenging dish in my repertoire is oatmeal, but I'm tempted to try your casserole. Looks foolproof!

Is the consistency like quiche, or firmer? How well does it reheat?

Actually it is very similar to a typical French quiche..... it is a little thicker though.... And now you made a great question, about the "reheat".... to be frank ... there was never a leftover of this stuff and I don't know how it reheats.... :laf:
