Is it bad I chuckled at the extra 'e' in the title? :twitchsmile:

That recipe caught my attention on HuffPo. Happy to see it here! (Several readers wondered if one and a half cups of bourbon might be a misprint — it does seem like a lot. If you try the recipe, let us know.)

I'm a year-round slave to sweet potatoes. Love 'em!

Absolutely delicious..used Makers Mark....it was addictive...first dish to disappear.

Yes, it was excellent, blended very well with the recipe...

For those of you who prefer to be able to copy/paste your recipes and manipulate them as desired, the highlight-able text is below.

Caribbean Sweet Potato recipe

4 sweet potatoes (about 1 1/4 pounds), cooked, peeled and sieved
6 large eggs
2 pinches of salt
2 tablespoons of unbleached all-purpose flour
1/2 cup of molasses
2 ripe bananas, riced
1 1/2 cups of dark rum or bourbon
1 tablespoon grated fresh ginger
spices to tast (allspice, cinnamon and/or touch of clove)

Preheat the oven to 350. Mix all of the ingredients together and bake for about 45 minutes, until the pudding is set.

I am sad to admit that I turned up my nose at my Grandmother's sharecropper sweet potato pie for far too many years when I was a petulant youth. This dish will be a part of our next holiday meal. I've already put in a request with the family cook. The only thing missing from this recipe is a good dose of lard.
