I love the word spatchcock. Any time I can throw around a word that sounds like something horribly inappropriate, but in reality is an innocent term, is a good time in my book. Macerate is also nice for this purpose.

I've only ever spatchcocked a Cornish game hen. They're a little easier to handle, and might be good practice before despineifying an expensive turkey.
