Hey y'all. We will be at the Great American Distillers Festival in Portland, Oregon this Saturday. I must say, this year's show is the best so far. They even have a liquor store inside the event...a first. If you are in the area, drop by for a visit.

Marc, I tried the bottle Pacifique I recently received for the first time today and I must say I'm impressed! A very delicious product, and I can assure you I will be a regular customer. Well done!

Opened up a brand new bottle of Pacifique tonight. Ahh...... just like meeting an old friend. That aroma cannot be beat. It's one of a kind flavor is absolutely flawless in my book. Of the half dozen bottles i've had, each one is better than the last. And this one is damn near Valhalla in a bottle! I'm sure it's been talked to death but, if i had to pick only one absinthe.....it would be Pacifique.

Give it a rest dude. Just because you don't like it, don't mean you gotta keep trashing everyone that likes it. Plenty of variety out there, stick with the ones you like, and keep your barbed remarks to those that purposely make cheap swill.

I was speaking of mine. "It's one of a kind flavor". But hey, if you missed it Oh Great LAGN maybe I shoulda just kept my trap shut. I can't edit a post after I leave a page so I try real hard to get it rite tha furst thyme.

To avoid a cooked veggie flavor? I know in beer making, cooling the wort quickly is essential to avoiding the 'overcooked and canned veggie' taste.

Yeah, those photos are pretty pornographic. I had to quickly turn off the monitor when they popped up. Couldn't you have put a censored bar on there or something? Dear god, man, think of the children!

To avoid scorching the herbs with direct heat. The maceration is heated with steam or hot water, not direct fire. It is ridiculously easy to scorch without a bain marie.

After tasing every absinthe (and one arak) I have, my brother opted for a clown sized glass of Pacifique. I swam in Jade 1901 and L'Ancienne 2011, but at the end of the day, re-zeroed myself with a glass of Pacifique.

Marc, these are early days yet, but the wife and I are looking into taking a trip to visit friends in the Camano Island area. Tentative target time somewhere in the early spring. I noticed from the map that Woodinville is within striking distance of the island. If our plans fall into place I'd like to prearrange a visit to your distillery, see the new bright and shiny object that should be installed by then at the distillery.
