I think if you go back to some earlier pages of this thread Joe and/or Nathan may have made some cherrycello and mentioned it.

I thought about it, but never got around to it. I tried blueberrycello and peachcello. They were both okay, but not great. I've been reluctant to try them again. My second batch of pricklypearcello came out okay, but it was a real pain to make.

A friend of mine did make some tart cherry liqueur last year. I have a little bit left and it was awesome. An excellent balance of sweet, tart and cherry goodness. I don't know how he made it, but I think it was a similar recipe.

The Kandahar had a drink on their bar menu which involved house-made huckleberry infused vodka. I saw the jar of purple goodness, and if I had a source of huckleberries (like Joe and Jules in about a month)...I would try a batch of huckleberrycello.

So, call me crazy, but I've been thinking. Everyone is discussing the pros and cons of peeling citrus versus zesting for cello-making. Then, one has to get the peel/zest out of the ETOH. Peels are easier to remove, but risk introducing pith and thus bitterness to the cello. Zesting avoids pith better, but is tough to strain out and wastes flavorful oils in the process. So it occurred to me, why not try putting a whole lemon into the ETOH?

I'm doing an experiment with this concept. I took a canning jar, added a whole clean lemon (wax removed), and poured in enough Everclear to just cover it. After one day the ETOH is a beautiful bright yellow color and the scent of lemons is clearly present. I'm going to monitor this daily to see what happens over time. I think the biggest risk is the ETOH penetrating too deeply into the fruit and pulling out things I don't want. Monitoring the progress daily should demonstrate if that will happen and if so, when. I'll share my findings when the data is in.

Update on my experiment: I monitored the jar with the lemon covered in Everclear daily. After 5 days I removed the lemon. The liquid was bright yellow and smelled strongly of lemons. The lemon's peel was hardened and very pale yellow or almost white in spots. I then added a scrubbed lime and am waiting to see what that gets me. I know limecello has proven tricky due to difficulty of zesting a lime. Perhaps this is the answer?

Perhaps. Please keep us posted. When I made my buddha's hand citroncello (citronella) I just chopped it up and put it in the everclear. I've read that it has one of the mildest piths. It's drinkable, but nowhere near as good as the cellos that made the rounds up on the Ridge recently.

Thanks for the update! We have our first lemon-lime cello working right now, started it on the 12th. We went ahead and bought a microplane zester. It worked really well, really quick and easy zesting. We'll know how the cello turns out in a couple of weeks. I was amazed at the incredible deep green color after just a few hours in the everclear.

If this method continues to work, I'll start a full batch soon. The one issue I foresee is covering the fruit with ETOH since whole fruits take up much more room than zest. To get around this I'll use the smallest fruits possible (e.g. Key limes, Meyer lemons).

Not with the microplane. All you citrus-cello makers should check this thing out. I did the limes first, and they were pretty easy. I did the lemons next, and it was like zesting butter.

Check back earlier in the thread, I think Gwydion posted the link to the microplane. I got mine (er, Mary's) at Sanoma Williams.

I did, I left it out in plain sight. She found it. It's all good. She so rarely drinks and it's nice that she will sip with me rarely. I enjoy her company. I keep two glasses, just in case.
I just get tickled by such an outlandish drink with your name attached and then add the pre-ban to it. :twitchsmile:
