Is there a specific way to open St. George?? The cork is flush with the top of the bottle and it has some plastic piece on top as though I shouldnt use a cork screw.....

I just pried the wax top off and used a corkscrew.
That's the same with the Jades. If you've got a t-cork, put one of those in afterward.

Probably. You can get them at any brewing supply store in your area.

By the way, CLB and Eich T-corks work fine in other bottles, but you can
order a bag of your own for cheap too. That way you don't have to drain one bottle to cork another.

If drinking out of Absomphe-sized glasses I'd expect the "Why?" to be "Why would you have an opened bottle that wasn't empty?"
I'm trying to remember the size of the plastic disc. Would an Ah-So opener be able to get around it?
