My wife got the recipe from my mother. This pecan pie recipe is
a whole hell of alot lighter than regular pecan pie recipes, because there's
no heavy corn syrup in the recipe. It took me awhile to find it:
Pecan Pie:
1 - stick margarine, melted
1 3/4 - cup sugar
1/4 - cup flour
3 - eggs beaten well
1/2 - cup buttermilk
1 - teaspoon vanilla
1 - cup pecans
2 - instant pie crusts
Add sugar & flour to melted margarine.
Beat in eggs, buttermilk, vanilla & pecans.
Pour mixture in pie crusts (this will generally make two pies).
Bake pies 20 minutes at 375 degrees.
Reduce heat to 300 degrees and continue baking for 40 minutes.
After having this version of pecan pie I can assure you that no other
pie will do...

Mmmm, thanks! I like me some pecan pie, and your recipe looks great.
Could you substitute butter for margarine, do you think?
Bet the tang of the buttermilk helps balance the sweetness. Nifty addition.
Do the pecans fill the pie all the way to the bottom crust? I like floor-to-ceiling pecans.

My wife says you can substitute butter for margarine. And yes, the pie is loaded with pecans.

I love pecan pie and we don't have corn syrup here, sooo of course I'll have to give this a test drive. Oh, and can you substitute homemade crusts for the store bought?

I find homemade crusts far superior to the pre-fab ones. As corny as it sounds, when you take the time to make every last bit of the pie, you can just taste the difference.
Edit: Anyone got a good recipe for sweet potato pie?

One year for Thanksgiving at my friend's house, I made the pecan pie with rice syrup instead of corn syrup. (the Mr. has food/health issues with corn products) It was so much better than the original. I just use the regular Good Houskeeping cookbook recipe.

I have one that I snagged years ago from Cooks Illustrated. True-to-form, I've never gotten around to trying it.
